ANSA - طبعة 2024 من كتاب 'في المطبخ..لا أهدر'
(أنسامد) -أبريل 18- روما - صدرت الطبعة الحديثة 2024 من كتاب الطبخ لمكافحة الهدر "فى المطبخ..لا أهدر" من تأليف مؤسسة بنك الطعام.
وتهدف المبادرة التي تم تنفيذها بالتعاون مع المعهد الفندقى في أسيزى لتكوين حليفاً فى المطبخ لضمان أن المكونات المتبقية فى الثلاجة سيتم إعادة استخدامها.
ويهدف الكتاب إلى نشر معرفة أفضل بقيمة الطعام والعمل اللازم لإنتاجه وإعادة استخدام كميات أقل من الأطعمة وخاصة الفاكهة والخضروات.
وأشارت تقديرات بنك الطعام إلى أن هدر الطعام يولد ما بين 8 إلى 10% من انبعاثات الغازات الدفيئة على مستوى العالم.
وتتذكر التقارير أنه فى النشاط اليومى يعاد توزيع فائض الأغذية من سلسلة التوريد باكملها مثل الفواكه والخضروات وصناعة الأغذية الزراعية وتجارة التجزئة على نطاق واسع والمطاعم مجاناً على أكثر من 7600 منظمة محلية تابعة مثل المقاصف ومراكز الاستقبال وبيوت العائلات التى تستقبل المساعدات الغذائية والتي تضم 1.750.000 شخص.
وتشرح التقارير أن كل كيلو جرام من الطعام الغير مهدر يقابله 1.76 كيلو جرام من ثانى اكسيد الكربون غير المنبعث فى الهواء.
